Mike’s Three Meat Texas Red Chili Southern Recipe

Ingredients:

1/4 c sugar
1 tsp of salt
4 c water
1 c fine cornmeal
2 Tbsps oregano
1/2 c chopped pepper (green)
1 c chopped onion
2 Tbsps chopped garlic
2 Tbsps cumin
1/2 c chili seasoning
2 pounds cubed veal
2 pounds cubed beef
2 pounds cubed pork

Instructions:

Cook meat w/ pork first followed by beef & veal. You remove them from the pan then drain. You place them in pot then pour excess oil. Saute peppers & onions then add them into meat.

You add rest of your ingredients excluding water & cornmeal. Let mixture simmer about 3 hrs. Combine water & cornmeal then add into pot to thicken.Cook ’til wanted consistency. Serve w/ grated cheese & chopped onions.

Southern Pork Chops Recipe

Ingredients:

4 pork chops slices
1 tbsps vegetable oil or shortening
1/4 teasp salt
1/4 teasp sage
2 apples, cored and sliced, (tart)
Dash brown sugar
1 tbsps flour
1/2 c hot water
1/2 tbsp vinegar
1/4 c raisins

Directions:

1. Deep Fry the pork chops in heated oil
2. Sprinkle salt & sage, then, put in a baking dish.
3. Top with apple rings, then Sprinkle some brown sugar.
4. Mix flour with fat in a skillet and blend well.
5. Add 1/2 c hot water and 1/2 tbsp vinegar.
6. Cook until thick.
7. Add 1/4 c raisins and pour over pork chops.
8. Bake, uncovered, in a 350 degrees for 60 minutes.

Serve 4.

Ingredients:

1/4 bellpepper (small); chopped
1 large egg
1 & 1/2 c flour
2 tsps baking-powder
1 green onion; chopped
1 tsp salt
1 Tbsp beer
1 c cornmeal
1 c cream-style corn

Instructions:

Mix all ingredients, stirring well ’til thickened. Add extra cornmeal as necessary. You drop mixture by tablespoonfuls onto deep heated fat. You fry them ’til golden-brown.

Serendipity’s Southern Chili Recipe

Ingredients:

4 can of kidney-beans
A can of whole tomatoes
1 Tbsp sugar
1 Tbsp salt
1 Tbsp fresh ground pepper (black)
3 cloves garlic; crushed
3 Tbsps ground cumin
4 Tbsps ground mild chile (red)
8 Tbsps ground hot chili (red)
4 pounds of lean beef hamburger; grind
1 large onion; chopped coarsely
4 Tbsp butter

Instructions:

Have butter melted in large pot set over mid-heat. You add the onions then cook ’til translucent.

You combine meat w/ pepper, garlic, cumin & chile. You place mixture into pot, breaking up lumps w/ fork. Stir often while cooking ’til meat browns.

Add rest of the ingredients. Boil & lower heat. Simmer w/o cover for 4-8 hrs, stirring often. Season as desired.

Ingredients:

2 tsps vanilla
4 c biscuit bake mix
4 Tbsps sugar
1/4 c sourcream
1 c creamcheese
8 large eggs
3 c milk

Instructions:

Create crepes by following package instructions of bake mix.

Quick made crepes; You combine 2 c bake mix, 1 & 1/2 c milk and 4 large eggs, beating ’til smoothened in processor ’til mixture thickens.

Pour 1/4 c batter onto every crepe in hot pan. You turn pan ’til batter will cover its bottom then cook it over mid-heat ’til golden-brown. Looses its edges w/ spatula then turn it over & cook opposite side ’til golden-brown.

Mom’s Southern Pecan Pie Recipe

Ingredients:

24 halved pecans
2 Tbsps espresso
2 tsps extract (vanilla)
3 large eggs
2 Tbsps cornstarch
3 Tbsps water
1/3 c applesauce (unsweetened)
1 Tbsp cornmeal
1 c fruit-sweetener
1 pastry shell; unbaked

Instructions:

Place pastry in 9-inch pie plate. Combine applesauce, cornmeal & sweetener in bowl, beating w/ mixer. Blend cornstarch & water in another bowl ’til smoothened.

You add mixture into sweetener into mixture then blend. You beat eggs gradually then add coffee & vanilla. You pour mixture onto pastry shell then top w/ halved pecans.

You bake it for 30-40 mins at three hundred seventy-five degrees Fahrenheit ’til custard sets. Slightly cool before slicing.

Ingredients:

1 beaten egg
5 fluid ounces of warmed milk
1 tsp butter
8 ounces of flour (plain)
5 fluid ounces of warmed water
1 tsp sugar
1/2 ounces of yeast (fresh)
1 tsp of salt

Instructions:

Sift salt & flour into warmed bowl. Have yeast dissolved in warmed water & sugar. Have butter melted in warmed milk then beat into egg. You stir yeast-liquid then add milk-mixtue onto flour.

Stir well ’til batter gets smoothened, beating well. Have it covered then leave it in warm corner about 1 & 1/2 hrs ’til batter bubbles & thickens.

Have it warmed in bake-stone then grease w/ lard. Stir batter & then laddle mixture onto bake-stone in rounded puddles, leaves spaces in between. Cook them over mid-heat ’til bubbly & light gold in color.

You flip pikelets then cook opposite side. Best when served with honey & butter.

Ingredients:

16 ounces tomatoes; stewed
1/2 c chopped red & green peppers
1 c onions; chopped
A can of v8 juice
2 Tbsps paprika
3/4 c chili-blend
1 tsp of cayenne-pepper
1/2 Tbsp oregano (mexican)
1 tsp cilantro
2 bayleaves
1 Tbsp cocoa
1 tsp minced garlic
1 tsp cumin seeds
2 tsps salt
1 tsp thyme
1 c celery; chopped
1/2 tsp coffee
1 Tbsp beef-soup base
1/8 c dark-brown sugar
5 cooked bacon strips
1 pound pork (ground)
3 pounds beef (ground)

Instructions:

Brown beef & pork then drain them well. You combine all the ingredients into large crockpot then cover. You cook it at high-heat for about 4 to 6 hrs.

Ingredients:

6 c chicken broth
4 c water
1 teasp salt
1 teasp dry thyme leaves
1/2 teasp garlic herb seasoning or 1 garlic clove, minced
1 bay leaf
1 meaty ham bone or smoked ham hock
1 lb lentils
2 med carrots, chops
3 ribs celery, chops
1 large onion, chops
1 c escarole, chops
Salt and pepper, to taste
2 tbsps fresh parsley, chops

Directions:

In a large pot boil the first 12 ingredients at low temp. Cook, covered and simmer for 3/4 hr. Debone and chop the ham. Return chopped ham to the pot. Cover and continue cooking for 1 hr more. Season to taste and add the herbs.Serve

Chicken-Fried Steak With Southern Gravy Recipe

Ingredients:

1 & 3/4 c milk
3 Tbsps margarine
1/2 tsp pepper (black)
1 & 1/2 c flour (unsifted)
1/2 c beef bouillon
Pepper
Salt
1/4 c shortening
2 c cracker crumb
2 Tbsps milk
2 beaten egg
2 pounds rounded steak

Instructions:

Have the steak cut onto serving size pieces. You thoroughly pound the steak. Combine milk & eggs. You dip the eat into egg-mixture then into crumbs.

Slowly brown them in heated shortening. Have it seasoned w/ pepper & salt. Tightly cover then cook them over low-heat for 45-60 mins ’til tender. Best when served w/ southern-gravy.

For gravy: Combine bouillon, flour & pepper. MIx then keep in jar w/ tight cover. Shaking before you use.

Add 1/4 c ready-mix onto drippings. Stir while cooking ’til browned. You add milk, stirring ’til bouillon dissolves & mixture thickens.

Ingredients:

1/2 c milk (cold)
1/4 pound butter (unsalted); plus 2 Tbsps
1/4 tsp salt
1 & 1/2 Tbsps baking-powder
1/4 c sugar
2 & 1/2 c flour (all-purpose)

Instructions:

Combine salt, baking-powder, sugar & flour, break lumps. Cut in butter manually ’til mixture becomes a coarse corn meal. Stir milk in gradually. Mix ’til dry components have been moistened.

You spoon batter onto 12 oiled muffin tins then bake them for 35-40 mins at three hundred fifty degrees Fahrenheit.

Ingredients:

1/4 c Tabasco sauce
1/2 tsp pepper (black)
A pinch of thyme
A pinch of basil
A pinch of crushed redpepper

Grated cheese (Parmesan)
1 large egg
10 ounces refrigerated dough for pizza
Filling of choice

Instructions:

Unroll the dough then stretch it into 15×10-inch rectangle. You cut this into six 5-inch squares. You divide chosen filling amongst the squares. You brush its edges w/ water.

You lift a corner then stretch this dough slowly over other corner. You press dough’s edges well to tightly seal. You arrange them on buttered bake sheet. You prick its tops w/ fork.

You combine 1 Tbsp water & egg then brush this into calznes then sprinkle w/ cheese as necessary. Bake for 8 to 10 mins at 425 degrees F then stand about five mins prior to serving.

Basic Creme Brulee – Southern Living Recipe


Basic Creme Brulee – Southern Living Recipe

Ingredients:

2 c of cream (whipping)
5 pcs of egg yolks (large)
1/2 c of sugar (refined)
1 Tbsp of vanilla
1/2 c of sugar (light brown)

Instructions:

Combine cream, egg yolks, refined sugar, and vanilla extract; whisk thoroughly till sugar has dissolved completely and the mixture becomes smooth.

Slowly pour mixture of egg onto 5 5-inch round (custard) cups. Arrange them onto a large baking pan with hot water.

Bake inside the oven 275 degrees F for 45-60 mins till almost firm. Let them cool in water inside the baking pan, place on the rack.

Once cooled, take the out from the pan. Cover then place inside the refrigerator overnight.

Before serving, sprinkle 1-1/2 tablespoons of light-brown sugar onto every custard. Heat them with flamed torch or broil till browned and bubbly. Careful not to burn. Let it stand for 5 mins till caramels have hardened.

4 Tbsps self rising flour
2 ounces softened butter

Sieve into bowl w/ salt then beat butter in, adding enough flour to create a softened dough. You turn dough into floured working board then pat it out into 3/4inch thick. You cut this into even rounds w/ cutter.

Have them placed in greased bake-stone then cook them over mid-heat ’til golden-brown. Turn then cook opposite side. You remove them from your bake-stone, split then generously spread w/ butter then close.

4 pcs of bananas (ripe); sliced
1-1/2 c of diced oranges
1 c of grapes (seedless)

For the Red-Fuit Salad Dressing:
1/2 c of mayonnaise
1/2 c of cranberry sauce (jellied)
1/2 c of whipped cream (whipping)

Instructions:

Combine bananas, oranges, grapes, and dates; sprinkle juice on them. Place inside the refrigerator till chilled. Gently toss and garnish coconut flakes. Serve chilled with the dressing.

Dressing: Combine mayonnaise, cranberry sauce, and cream; mix by folding.

Ingredients:

2 fluid ounces boiled water
2 Tbsps melted fat of bacon
A pinch of soda bicarbonate
1/2 tsp salt
4 ounces oatmeal; grinded

Instructions:

Mix soda, salt & oatmeal in bowl. Create small well at center then pour fat, adding water in order to create a stiffened dough. You sprinkle board w/ oatmeal then coat your clean hands w/ it as well.

You knead mixture ’til smooth. You flatten ball then roll out onto 1/4-inch thick round. Have plate inverted over then trim uneven edges off. You cut it into even quarters then place in warmed & greased bake-stone.

Cook them over mid-heat about 20 mins ’til triangles will curl over its corners. You turn then cook opposite side for additional 5 mins.

Keep them in tightly covered containers then cook them over grill just before you serve.

4 Tbsps dripping
2 well-beaten eggs
1 c buttermilk
1/2 tsp baking-soda
1/2 tsp of salt

3 Tbsps flour
1 & 1/2 c ground cornmeal

Instructions:

Have oven preheated to three hundred fifty degrees Fahrenheit. You combine dry components then add wet ones. You mixture onto greased bake pan then bake about 40 mins.

Skim the buttermilk then add eggs & butter then pour into prepared pan. Fry batter in pan, flipping over to brown both sides.

Ingredients:

1 & 1/3 pound beans (pinto)
2 Tbsps masa-harina
1 & 1/3 Tbsps garlic; chopped
2/3 Tbsp salt
2 Tbsps cinnamon
2 Tbsps cocoa (unsweetened)
2 Tbsps oregano
2 Tbsps cumin (ground)
3 & 1/3 Tbsps chili seasoning
2 c water
1 & 1/3 c tomato-juice
3 & 1/3 onions; chopped
3 & 1/3 oil (olive)
1 pound ground beef
1 pound ground pork

Instructions:

Cook meat in skillet ’til gray in color about twenty mins then set it aside. Have oil heated using that skiller then cook onions ’til translucent & soft about 10-20 mins.

You add meat onto onions then add salt, cinnamon, cocoa, oregano, cumin, chili seasoning, 3 c water & tomato-juice. Blend well then turn heat into high then boil.

You reduce heat & simmer w/o cover about 60 mins. Occasionally stir then season accordingly. You add extra chili seasoning as desired then cook about 30 mins more.

Add masa-harina & garlic. Cook pinto beans then add prior to serving.

Crockpot Chicken and Pasta Soup Recipe

Ingredients:

3 x 10.5 oz cans condensed chicken broth
1 c water
2 c chicken, dices & cooked
1 can x 14.5 oz diced and juicy tomatoes
1 c onion chops
1/2 c celery dices
1/2 teasp dry basil leaves
1 teasp dry parsley flakes
Dash garlic powder
1/2 c ditali or any small pasta shapes, about 2 to 3 oz
1 c frozen peas and carrots, thawed, or mixed vegetables

Instructions:

Use a 5 to 7-quart Crockpot to mix the first nine ingredients. Cook, covered on LOW temp. for 5 to 7 hours, or until the vegetables are tender.

Cook the pasta in boiling salted water as instructed on the package, then, add the frozen vegetables about 1 min before the pasta is done.

Set to Drain. Add the cooked pasta and vegetables to the 9 ingredients mixture. Cover and continue cooking on LOW for about 1 hr.

Ingredients:

1 tsp cornstarch
1/2 c thick cream
A pinch of cayenne-pepper
1 & 1/2 c peeled tomatoes; chopped
3/4 c chopped potatoes (raw)
4 c chicken stock
1/2 c finely-chopped celery
1/2 c finely-chopped onion
1 c new-corn pulp
2 thick bacon slices; diced
A pinch of thyme
A pinch of sage
1/4 bayleaf
1 celery stalk; chopped
1/2 small carrot; sliced lengthwise
1 small leek
4 parsley sprigs

Instructions:

Combine parsley, leek, carrot, celery, bayleaf, sage & thyme. You wrap them together in cheesecloth then set it aside.

Cook bacon in saucepan set over midheat then you add celery, onions & corn, sauteing for 5 mins ’til tender. You add boquet-garni, tomatoes, potatoes & chicken stock. Heat ’til boiling then reduce the heat & boil mixture slowly about 60 mins.

You remove boquet-garni then you add cayenne-pepper. Have sugar dissolved in thick cream set at room-temp. You add cornstarch mixture, stirring ’til thoroughly heated.

Basic Southern Tomato Sauce Recipe

Ingredients:

Salt
1 Tbsp parsley; chopped
3 Tbsps oil (olive)
1 clove garlic
35 ounces canned tomatoes (plum); chopped coarsely

Instructions:

Place chopped plum tomatoes in plate, reserving their liquid. Cut it into half. Have oil heated in saute-pan. Simmer garlic ’til lightly-golden. Press these pieces well against pan then immediately remove.

Raise oven heat into mid-high then add tomatoes w/ their juices. Stir often while simmering about 10 mins ’til sauce thickens slightly. You add parsley & 1/4 tsp salt, stirring well.

Pickled pepper slices
Sliced tomatoes
Lettuce
Mustard

1 c grated cheese (sapsago)
4 c cooked chicken
12 tortillas
1 tsp powdered onion
2 c minced garlic
1/2 tsp ground coriander
1/2 tsp chili seasoning
2 Tbsps canned chiles (green)
1 c plain non-fat yogurt
1 c pureed tomato

Instructions:

Combine powdered onion, garlic, coriander, chili seasoning, chiles, yogurt & puree. You place the tortillas in oven racks, set at 350 degrees F.

You heat them ’til crisp for about 5-7 mins. Have tortillas arranged in shallow bake dish the layer sauce & chicken over the tortillas. You bake them for 25-30 mins at 350 degrees F.

Garnish with cheese as wanted.

Chocolate Amaretto Cheesecake (Southern Living) Recipe

Ingredients:

2 Tbsps sliced almonds
Whipped cream; refrigerated
1/2 c egg-substitute
2 Tbsps vanilla
3 Tbsps amaretto
2/3 c all-purpose flour
2/3 c unsweetened cocoa
2 c granulated sugar
32 ounces fat-free creamcheese
1/2 c chocolate-graham cookies
Vegetable cooking-spray

Instructions:

Sprinkle about 1/4 c crumbs into bottom part of 9″ spring-form pan that has been coated w/ cooking-spray. Place creamcheese, sugar, cocoa, flour, amaretto & vanilla in processor then process ’til smoothened.

You add egg-substitute then process ’til well-blended. You pour the mixture onto pan. Have it baked for 45-5o mins at three hundred degrees Fahrenheit ’til set.

You sprinkle it w/ 1/4 c crumbs then completely cool on racks. Refrigerate w/ cover about 8 hrs. Top w/ cream the sprinkle w/ almonds as desired.

Ingredients:

1/4 tsp extract (lemon)
2 large eggs
Grated rind of lemon
1 & 1/2 Tbsps juice of lemon
3 c milk
2 Tbsps powdered sugar
3/4 tsp salt
1/2 c sugar
1/2 c rice

Instructions:

Have rice cleaned then place it in double-boiler. You add the milk then cook ’til soft. You add beaten eggyolks, salt, juice of lemon, grated rind & sugar. Cook ’til mixture is thickened.

You pour mixture into greased bake pan. Beat eggwhites ’til stiff then fold this gradually into sugar powder & extract. You pile it over pudding then bake it in moderately-heated oven ’til browned.

Best when served w/ cream.

Combine 1/2 c sugar & peaches then stand about 10 mins. Have butter melted in 8×12x2″ bake dish then set it aside.

You combine salt, baking-powder, 1 c sugar & flour in bowl. You add the milk then mix thoroughly. You pour the batter onto dish then pour peach-mixture over the batter.

Have it baked for about 50 mins at three hundred seventy-five degrees Fahrenheit ’til golden-brown. Best when served w/ icecream.

Southern Gravy Recipe

Ingredients:

1 & 3/4 c milk
3 Tbsps margarine
1/2 tsp pepper (black)
1 & 1/2 c flour (unsifted)
1/2 c beef bouillon

Instructions:

Combine bouillon, flour & pepper in bowl. Keep at room-temp in jar w/ tight cover. Shake vigorously prior to using.

Gravy: You combine 1/4 c ready-mix onto margarine then stir while cooking ’til browned. Add milk, stirring ’til thickened & bouillon has been dissolved.

Apple & Potato Cake (Bakestone Recipes) Recipe

Ingredients:

1-1/2 lbs of potatoes (floury); peeled
3 tsps of salt
2 oz of butter (unsalted)
4 Tbsps of flour (self-rising)
2 pcs of apples (fresh); cored, peeled, and chopped
2 Tbsps of sugar (granulated)
3 Tbsps of butter; softened

Instructions:

Boil potatoes on salted water then drain; cover cloth on them till dried. Mash them on a bowl then add two ounces of butter.

Beat thoroughly then add enough amount of flour till dough is pliable; add salt. Divide dough into half then roll to two rounds, about 1/2-inch of thickness.

Place a round onto heated bakestone then spread over chopped apples. Cover the second dough; seal its edges by pinching them. Bake above medium heat till browned on its base. Carefully flip to cook second side.

Transfer cake onto a warm serving plate. Gently peel its top; spread soft butter over apples then sprinkle the sugar atop. Fold it close then repeat on second side. Lightly or generously sprinkle the sugar atop.

Serve at once with cool thick cream.

Ingredients:

2 & 1/2 ounces of whiskey (bourbon)
1 tsp sugar powder
Water

Instructions:

Dissolve about 1 tsp sugar w/ 2 tsps water in mug. Fill w/ fine shaved-ice then add whiskey, stirring ’til sugar frosts, adding extra ice as needed.Garnish w/ mint sprigs.

Beer Batter Turkey Recipe

Ingredients:

1 Tbsp honey
1/4 c jellied cranberry-sauce
1 small peeled apple; cored & sliced
1 c oil
2 & 1/2 c cooked turkey
3/4 c beer
A dash of pepper
1/2 tsp salt
2 tsps baking-powder
1 & 1/2 c all-purpose flour

Instructions:

Combine pepper, salt, baking-powder & flour in bowl. Add beer, stirring ’til smoothened. Have oil heated in skillet then dip apples & turkey in prepared batter to evenly coat.

You separate chicken pieces, frying in heated oil ’til golden-brown. You let them drain well on paper-towels then serve w/ warm Cranberry-Honey Dip sauce.

For sauce: Beat together jellied cranberry-sauce w/ honey in bowl, stirring well.

Arjay’s Sand Springs Chili – Southern Recipe

Ingredients:

2 lbs of beef (coarse ground)
1/2 lb of steak (flank); cut to 1/4-inch cubes
1/2 lb of beef (regular ground)
15 ounces of tomato sauce
1-1/2 c of beer
12 ounces of tomato paste
1 Tbsps of cornmeal (yellow)
1 Tbsp of vinegar (red wine)
1/4 c of onion (instant minced)
1/4 c of chili (powder)
1 tsp of crushed pepper (red)
1 tsp of cumin (ground)
1/4 tsp of basil leaves
1/4 tsp of caraway seeds
1/4 tsp of coriander (ground)
1/4 tsp of marjoram
1/4 tsp of ground pepper (red)
1/3 tsp of ginger (ground)
1/3 tsp of tarragon
1/3 tsp of dill (seed)
1/3 tsp of paprika
1/3 tsp of turmeric (ground)
1/3 tsp of cardamom (ground)
1/16 tsp of curry powder
1/16 tsp of dill (weed)
1/16 tsp of rosemary
1/16 tsp of saffron
1 pc of crushed bay leaf
1 pc of cinnamon (stick)
1-1/2 tsps of garlic; chopped finely
1-1/2 tsps of salt
1 Tbsp of oregano (leaves)
2 Tbsps of oil (salad)
1/16 tsp of thyme

Instructions:

Heat the oil on a saucepan till heated well. Add cubed steak and cook till browned; take them out then set on the side.

Add in ground meats and cook till browned; stir constantly crumbling them. Add vinegar (tomato) paste, (tomato) sauce, and 1 cup water.

Combine cornmeal with onions; add spices inside a mixing bowl. Once meat is cooked thoroughly, add the mixture of cornmeal along with the browned steak; stir thoroughly.

Add beer then stir thoroughly till well mixed, adding more if necessary.

Cover and let it simmer above gentle for 2 hrs; stir occasionally. Add water when necessary. Discard stick of cinnamon then serve.

Macaroni Salad with Eggs and Ham Recipe

Ingredients:

12 hard cooked eggs, diced
3 c ham, cooked & diced
4 c macaroni, cold & cooked
1 c chopped celery
2 dill pickles, chops
1/2 c pimiento-stuffed olives, chops
Mayonnaise
Salt to taste
Pepper to taste
mixed salad greens

Directions:

Mix the first six ingredients. Stir in Mayo to moisten and season to taste.

Serve on salad greens.

Chocolate Glaze For Basic Mixes Recipe

Ingredients:

1 tsp vanilla
2 slightly-beaten eggyolks
1 tsp light-corn syrup
1 c whipped cream
3 ounces chocolate (unsweetened); broken onto pcs
1 c sugar

Instructions:

Beat together syrup, cream & chocolate over midheat, stir often ’til chocolate melts. You reduce the heat then simmer w/o stirring for 10 mins.

Add 2 Tbsps choco mixture gradually into beaten eggyolks then stir it into pan.
Set over low-heat, stirring often for 3-4 mins. Add vanilla then cool at room-temp.
