Serendipity’s Southern Chili Recipe
Ingredients:
4 can of kidney-beans
A can of whole tomatoes
1 Tbsp sugar
1 Tbsp salt
1 Tbsp fresh ground pepper (black)
3 cloves garlic; crushed
3 Tbsps ground cumin
4 Tbsps ground mild chile (red)
8 Tbsps ground hot chili (red)
4 pounds of lean beef hamburger; grind
1 large onion; chopped coarsely
4 Tbsp butter
Instructions:
Have butter melted in large pot set over mid-heat. You add the onions then cook ’til translucent.
You combine meat w/ pepper, garlic, cumin & chile. You place mixture into pot, breaking up lumps w/ fork. Stir often while cooking ’til meat browns.
Add rest of the ingredients. Boil & lower heat. Simmer w/o cover for 4-8 hrs, stirring often. Season as desired.

Mike’s Texas Chili Southern Recipe
Ingredients:
16 ounces tomatoes; stewed
1/2 c chopped red & green peppers
1 c onions; chopped
A can of v8 juice
2 Tbsps paprika
3/4 c chili-blend
1 tsp of cayenne-pepper
1/2 Tbsp oregano (mexican)
1 tsp cilantro
2 bayleaves
1 Tbsp cocoa
1 tsp minced garlic
1 tsp cumin seeds
2 tsps salt
1 tsp thyme
1 c celery; chopped
1/2 tsp coffee
1 Tbsp beef-soup base
1/8 c dark-brown sugar
5 cooked bacon strips
1 pound pork (ground)
3 pounds beef (ground)
Instructions:
Brown beef & pork then drain them well. You combine all the ingredients into large crockpot then cover. You cook it at high-heat for about 4 to 6 hrs.

Original Sin Chili Southern Recipe
Ingredients:
1/4 c Tabasco sauce
1/2 tsp pepper (black)
A pinch of thyme
A pinch of basil
A pinch of crushed redpepper
1/4 c ketchup
1/4 c barbecue sauce
1 tsp salt
1 tsp beef-bouillon
1 tsp paprika
1 tsp onion seasoning
1 tsp oregano
2 tsps cumin
2 ounces powdered chili
1 tsp garlic; chopped
1/4 c banana-pepper juice
Pickled banana-peppers
1 chopped pepper (green)
2 chopped celery-ribs
1/2 c dry onions
2 pounds steak; cut int0 1/2-inch squares
2 pounds beef (ground)
1 pack onion-soup mix
2 qts beef broth
Instructions:
Seed & chop the peppers. Cook beef in pan ’til browned. Drain excess fat off. Have everything combined in pot then simmer about 2 hrs. Season as desired then continue simmering for 60 more mins.

Chocolate Chili Southern Recipe
Ingredients:
1 & 1/3 pound beans (pinto)
2 Tbsps masa-harina
1 & 1/3 Tbsps garlic; chopped
2/3 Tbsp salt
2 Tbsps cinnamon
2 Tbsps cocoa (unsweetened)
2 Tbsps oregano
2 Tbsps cumin (ground)
3 & 1/3 Tbsps chili seasoning
2 c water
1 & 1/3 c tomato-juice
3 & 1/3 onions; chopped
3 & 1/3 oil (olive)
1 pound ground beef
1 pound ground pork
Instructions:
Cook meat in skillet ’til gray in color about twenty mins then set it aside. Have oil heated using that skiller then cook onions ’til translucent & soft about 10-20 mins.
You add meat onto onions then add salt, cinnamon, cocoa, oregano, cumin, chili seasoning, 3 c water & tomato-juice. Blend well then turn heat into high then boil.
You reduce heat & simmer w/o cover about 60 mins. Occasionally stir then season accordingly. You add extra chili seasoning as desired then cook about 30 mins more.
Add masa-harina & garlic. Cook pinto beans then add prior to serving.

New Corn Chowder – Southern Style Recipe
Ingredients:
1 tsp cornstarch
1/2 c thick cream
A pinch of cayenne-pepper
1 & 1/2 c peeled tomatoes; chopped
3/4 c chopped potatoes (raw)
4 c chicken stock
1/2 c finely-chopped celery
1/2 c finely-chopped onion
1 c new-corn pulp
2 thick bacon slices; diced
A pinch of thyme
A pinch of sage
1/4 bayleaf
1 celery stalk; chopped
1/2 small carrot; sliced lengthwise
1 small leek
4 parsley sprigs
Instructions:
Combine parsley, leek, carrot, celery, bayleaf, sage & thyme. You wrap them together in cheesecloth then set it aside.
Cook bacon in saucepan set over midheat then you add celery, onions & corn, sauteing for 5 mins ’til tender. You add boquet-garni, tomatoes, potatoes & chicken stock. Heat ’til boiling then reduce the heat & boil mixture slowly about 60 mins.
You remove boquet-garni then you add cayenne-pepper. Have sugar dissolved in thick cream set at room-temp. You add cornstarch mixture, stirring ’til thoroughly heated.
